Spanish Style Macaroni

A quick and delicious supper, based on a traditional Catalan dish I found whilst on a stay in Barcelona.

I've "Romerised" it a little, in my usual way, to make it quicker and easier!

I often adapt recipes from the original, for a variety of reasons, more often than not because it's hard to find some of the ingredients in this part of the world.

    Ingredients - Fruit

    250 grams (½lb) quick cook macaroni
    2 cloves of garlic
    1 medium sized onion
    5 or 6 rashers of smoked streaky bacon or pancetta
    1 tin of chopped tomatoes
    2 tablespoons of tomato puree
    ¼ pint of vegetable stock or water
    Black pepper and parsley for seasoning

    Method

    Heat 2 or 3 tablespoons of good olive oil in a wok, or deep frying pan, and soften the onions and garlic.
    Slice the bacon in 1inch pieces, add to the pan and cook for a few minutes.
    Add the macaroni and toss about in the onion mixture to absorb all the flavours.
    Tip in the tinned tomatoes, stir and cook, add the stock and tomato puree and continue to cook until most of the liquid is absorbed and the macaroni is tender.
    Add more stock, or water, if necessary.
    Season with a grinding of black pepper, sprinkle with chopped parsley and serve.

    Tip

    For a vegetarian alternative, omit the bacon and stir in a can of cannelloni beans 5 minutes before it's ready.
